This week Squirrel is going nuts over even more summer produce, including dill, scallions and cabbage from Post Apples CSA, organic green beans from Hidden Valley Farms, and sorrel from Conscious Food Project at Raintree Farms (and be on the lookout for fresh blueberries starting tomorrow!) He’s also going nuts over new Sweet Heat Roasted Seeds from Top Seedz. Recipe Corner: summer salads, done different!
Looking for some salad recipes that aren’t your typical summer potato salads, macaroni salads, or greens + tomatoes + dressing? Thanks to the unique array of herbs, greens, and produce this week, we’ve got your inspo.
Sorrel is a common edible garden “weed!” Also known as sour clover, the heart-shaped leaves are packed with vitamin C and a citrusy punch that can replace a lemon anytime you’re in a pinch. Throw it in your classic greens + fruit + dressing salad formula, as a sauce on top of salmon, or convert your sorrel greens into a dressing with this yummy sorrel vinaigrette. If you love tomatoes, grab some from Rick Walker Farms, combine with sorrel, salt, pepper, and oil, and you’ve got a simple tomato sorrel salad.
If you aren’t crazy about the mayo in your standard coleslaw, try a Mediterranean cabbage salad with lots of crunchy veg like carrots, onions (or scallions), radishes, and a bell pepper.
It’s cucumber season, and although they are a favorite salad additive, let them be the star of the show with this cucumber dill salad. We challenge you to make this with the sorrel vinaigrette for a super-local spin.
Do you love herbs so much you could eat them as a meal? Well, this scallion salad will suit your fancy with sliced scallions, cilantro, and red chile tossed in a bit of sugar, rice vinegar and sesame seeds.

MMPs Ains Pots + Hello Sunshine!
As we are now in the third month of our Market Monthly Partner program, we are excited to have two producers on tap for July! Please give a warm welcome to Ains Pots & Beth Ivanic of Hello Sunshine Children’s Boutique.
Ains Pots: Saturday, July 15th, 10 am-12 pm Ains Pots is the ceramic line offered by artist Ainsley Kissel. He is a fourth-year student at PennWest Edinboro with a dual major in Art Education and Ceramics. Inspired by the architecture in movies like Star Wars or Howl’s Moving Castle and rural, Ainsley enjoys using what he finds on the ground to press into his work and create unique textures.
Hello Sunshine: Meet and Greet date TBA. Hello Sunshine Children’s Boutique is a store recently opened by one of our producers, Beth Ivanic of Lizziebeth’s. If you’ve loved Lizziebeth Baby, Hello Sunshine expands on the awesomeness of her reusable baby gear with a whole store of children’s clothes (ages 0-6), silicone baby gear and non-toxic, fun toys for all ages. There is even an area in the store for kids to color, construct, or read books while the adults shop! We are still nailing down the date with Beth, so be sure to keep up with us on our socials and the next newsletter to know when the sun will come out to say “hello” at Edinboro Market.

Farm to Table Dinner Tickets: on sale now!
The time to pick up your Farm to Table Dinner tickets is here! Our updated date is now Saturday, August 26th at Goodell Gardens from 4-7 pm. Tickets are $60 per person. Seats are limited to 150 and we sold out last year, so be sure to stop in or call 814-266-2993 to order your tickets. Like last year, this will be a low-waste event, so plan to bring your own place setting, napkin, and glass.
Our goal is to provide access to fresh, locally grown food while being an entrepreneurial marketplace for food producers; and an understanding of the importance of both.
